Clemens Food Group is a sixth-generation, family-owned integrated pork production operation including farming, processing, transportation, and logistics. As one of the leading pork processing companies in the U.S., Clemens needed to expand operations to support record demand. In 2014, the customer chose a 400-acre site in Coldwater, Michigan, for its newest operation—the first greenfield project in the company’s 125-year history. Clemens selected Gray to design and build the facility.

Putting Shared Values into Practice
As family-owned businesses, Gray and Clemens put worker safety, food safety, and animal welfare first. The Coldwater facility delivers all three with innovation and a commitment to premium quality.
The facility follows Temple Grandin’s humane livestock handling methods, designed to provide comfort, fresh water, and freedom of movement. Each hog is tracked throughout the process and passes through multiple USDA inspections.

Gray provided a variety of design, construction, and engineering services for the project, including extensive work for the facility’s refrigeration systems and other process utilities. Gray incorporated fully automated conveyance equipment and AS/RS into the facility’s design, resulting in improved efficiencies, a reduced building footprint, and a higher quality, more consistent product. At full capacity, the plant can process approximately 11,000 hogs per day.
Additionally, Gray implemented patented chilling procedures to ensure food safety and minimize product shrinkage, including a -25 °F Snap Chill freezer with a 3,128-ft chain, the longest and fastest such system in the world. Clean-in-Place and Clean-out-of-Place ensures thorough sanitation and food safety technology throughout the facility.
Most importantly, the Clemens and Gray teams celebrated 1,000,000 safe man-hours with more than 1,000 workers onsite during the 34-month project.

Sharing Our Success
ProFood World recognized Gray and Clemens for the new Coldwater facility at the magazine’s annual Manufacturing Innovation Awards ceremony in Chicago. The leading industry publication recognized the companies for the state-of-the-art design/build project—Michigan’s first pork processing facility.

Phase II Expansion

Following the success of its award-winning Coldwater and Hatfield projects, Clemens turned to Gray once again for help in boosting production to meet rising demand. For its newest project with Gray, Clemens selected the company for a brownfield Phase II expansion of its Coldwater campus. In addition to the facility’s design and construction, Gray is also providing MEPR engineering, process design, self-perform concrete services, automation & controls, and robotic palletizing for a 68,000 s.f. automatic storage & retrieval system (AS/RS) in the customer’s warehouse.
The expanded facility includes more than 73,000 s.f. of cold storage and over 18,000 s.f. of new office space. Once complete, the expansion will increase the plant’s pork processing and storage capacity to 22,000 hogs, with 14,000 automated pallet positions. The expansion will significantly improve the plant’s efficiency, raising capacity while avoiding the challenges of increased labor needs.

The new fresh pork processing facility for Clemens Food Group in Coldwater, Michigan has been named a winner in ProFood World magazine’s 2018 Manufacturing Innovation Awards. In its second annual awards competition, ProFood World recognizes outstanding processing and packaging operations in the food and beverage industry. Gray Construction completed the 650,000 s.f. fresh pork processing facility in 28 months, allowing Clemens to produce 12 million pounds of pork per week to feed the world.
