Food Engineering Magazine Goes In-Depth with Gray Customer Chelten House

In the December issue of Food Engineering magazine, Gray Construction was featured for its recent Chelten House project in Las Vegas, Nev. In a cover story entitled, “Fabulous Food Plant: Chelten House Heads West to Meet Market Demand,” Food Engineering goes in-depth with the new fully automated food processing facility to reveal the reasons for selecting Las Vegas, how design and construction were developed and completed, and how quality is still maintained.

In the December issue of Food Engineering magazine, Gray Construction was featured for its recent Chelten House project in Las Vegas, Nev. In a cover story entitled, “Fabulous Food Plant: Chelten House Heads West to Meet Market Demand,” Food Engineering goes in-depth with the new fully automated food processing facility to reveal the reasons for selecting Las Vegas, how design and  construction were developed and completed, and how quality is still maintained.

Gray project manager David Hird explains how the facility is designed for future expansion and employee and food safety.

“The Las Vegas facility was designed with the intent of expanding production to four independent kitchen and packaging lines,” he said.

“In fact, areas where food or ingredients are exposed during preparation, and/or cooking are isolated independently from general plant and warehouse spaces,” Hird added.

Tyler Cundiff, Gray Senior Manager, Business Development was also interviewed to highlight how Gray’s Quality Management System (QMS) plays an integral role in the design-build process to accommodate FDA/USDA-compliant food processing facilities.

“Within Gray Construction’s proprietary QMS are design and construction best practices, which serve as a control point platform for our design-build team to use as a design baseline,” he explained. “These best practices have been captured through lessons learned over the years and are populated within the system.”
